Turnips are a good source of vitamin C. Before the arrival of the potato, turnips were one of the main sources of food for the English peasantry!
How to Select
Look for smaller turnips with unblemished skin that are firm to the touch and heavy for their size. If you can, buy turnips that still have their bright green tops and use them in the same way you use mustard greens.
How to Store
Turnips may become bitter with prolonged storage. Refrigerate in a plastic bag for use within 3 days.
How to Prepare
Both the root and the leaves of a turnip may be consumed. Before cooking turnips, wash and peel the skin with a vegetable peeler. Next, trim off the roots and greens.
