Peach Salsa

Recipe makes 4 cups
This delicious, fruity salsa is great for farmers markets and for kids!

1. Wash all vegetables.

2. Chop and seed tomatoes and drain off excess juices.

3. Finely chop green onions.

4. Peel and mince garlic.

5. Seed and finely chop hot pepper and green pepper.

6. Chop fresh cilantro.

7. Add all ingredients in large bowl, add salt, mix and enjoy!


Pair with multigrain chips. Best if tomatoes and peaches are mashed.


1 pound ripe tomatoes (2 large)

2 cups chopped peaches

cup green onions

1 tablespoon fresh garlic

1 tablespoon hot pepper

1 medium green pepper

cup fresh cilantro or parsley (optional)

teaspoon salt

Juice from 1 lime
