How to Select
Pick it up: Big or small, the watermelon should feel heavy for its size. Look for the yellow spot: Watermelons develop a splotch where they rest on the ground. When this splotch is creamy yellow, it's ripe. Give it a thump: Tap the underbelly of the watermelon. A ripe one will have a deep hollow sound. Under-ripe or over-ripe melons will sound dull.
How to Store
If a watermelon was cold when you bought it, keep it cold by storing it in the refrigerator. If not, it’s fine to leave the whole watermelon out at room temperature.
How to Prepare
Wash the melon prior to prep it and cut into it within a week. Slice or cube the red flesh and store in the fridge. Chunks can even be frozen to be used in frozen drinks.
